Nom Nom Paleo's Dark Choc Cherry Scones with Squash and Apple Flour

Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
In a large bowl, combine the flours, baking soda, and sea salt.
Cut the Irish butter into small pearl sized pieces. Use your hands to massage the butter into the dry ingredients until you've produced a crumbly mixture.
In a separate bowl, whisk together the eggs, apple cider vinegar, honey, and vanilla extract.
Make a well in the dry ingredients then add your wet mixture to it.
Gently mix the ingredients together with a spatula until a wet, chunky dough forms.
Add the chocolate and dried cherries.
Use your hands to mix the rest of the way. Use your hands to shape the dough into 6-8 wedge shaped scones (about 3/4 of an inch think).
Place on baking sheet a couple inches apart and bake for 20-30 min rotating the sheet halfway through. When a toothpick comes out clean, they're done!
Allow scones to cool on a wire rack for 5-10 min before serving.
