Curry-Style Meatballs in a Spicy Thai Pumpkin Gravy

  1. Preheat oven to 350F while you mix all of the meatball ingredients together in a large mixing bowl.

  2. Slightly oil your hands and roll the mixture into 2" balls and set aside.

  3. Heat a cast iron skillet or oven save pan on high.

  4. Add the curry ingredients to the warm pan using only half of the liquid at this time.

  5. Allow the spices and liquid to simmer for 5 min before adding your meatballs to the pan.

  6. Braise the meatballs in the curry, turning occasionally over the course of 8-12 minutes.

  7. Add the rest of the liquid to the pan and place directly into your preheated oven for 15-20 minutes or until they reach the desired temperature. Add more liquid to the pan midway through cooking if necessary.

  8. Garnish with fresh basil and enjoy.
