Grain Free Monte Cristo Sandwich with Apple French Bread

Directions:
  1. Beat the eggs in a shallow dish (large enough to fit a whole sandwich) along with the pinches of salt and pepper. Set aside.

  2. Construct the sandwiches to your linking with ham, cheese, and any condiments of your choice.

  3. Squish the first sandwhich lightly, then place the whole thing in the egg mixture. It should almost cover the bottom slice of bread.

  4. Allow to sit for 2 min on each side to really absorb the mixture.

  5. Melt the metter or place some oil in pan set to medium heat.

  6. Place the sandwiches one at a time in the pan and allow to brown for 2-3 min per side. Press down with the spatula as needed to keep everything contained.

  7. Repeat the process with remaining sandwiches.

  8. To prepare the raspberry sauce, place the raspberry jam/puree and milk in a microwave safe jar. Heat in the microwave on high for 1 min.

  9. Serve alongside the sandwiches as a dipping sauce.
