Fudgy Chocolate Brownies made with Sweet Potato Flour

  1. Preheat your oven to 350 degrees and thoroughly grease the bottom and walls of a 8x8 or 9x9 pan.

  2. Fill and preheat your double-boiler, or fill a small saucepan halfway with water and place on medium heat.

  3. While the water heats up, in a medium mixing bowl, thoroughly whisk together the eggs, sugar, vanilla and salt. Set aside.

  4. Place the butter/oil and chocolate chips on the double boiler or in a metal bowl ontop of the hot water.

  5. Stir the butter and chocolate with a rubber spatula until fully combined and melted.

  6. Add the melted chocolate and butter to the egg/sugar mixture and whisk until thoroughly combined.

  7. Slowly add the sweet potato flour and whisk in until well combined.

  8. Fill the greased pan with the batter and place on the middle rack of the oven.

  9. Bake for 20-30 min, checking after 20 minutes. The brownies are done when the middle is just slightly moist and the brownies start to lift of the sides of the pan slightly.

  10. Allow to cool in the pan for 10 min before cutting.
