Sunday Sweet Potato Flour Waffles for two (or one)

Preheat your waffle iron to hedium low.
In a medium mixing bowl, thoroughly mix together all the ingredients using a hand mixer and set aside.
Grease the top and bottom of the waffle iron using a pad of butter or oil on a paper towel.
Once preheated, follow the directions of your waffle iron to cook your first waffle. Ours came out the best with about a half cup of batter cooked for 5 minutes on medium/low (4/10)
Remove the waffle using tongs or a large fork and set aside. Repeat until you are out of batter and enjoy!
