Customer Recipe: Quick Griddle Squash Flour Tortillas

If using a cast iron skillet or griddle, preheat to hedium high. If using a tortilla press, set to medium.
In a medium mixing bowl, mix the flours, salt, and baking powder together thoroughly.
Add in the oil and hot water and mix until a ball is formed
Divide the dough into 6-8 even sized balls and roll out one at a time between 2 pieces of parchment paper.
Brush off excess flour (if used) and cook on a hot, ungreased griddle over medium high heat. Turn the tortilla when brown blisters form on the bottom—likely 30s-45s. Serve warm.
